You need to capitalize on the gourdness of fall before everything gets sprinkled with peppermint. It’s happening soon, ladies. Get that last bit of pumpkin out of your system.
I adapted these pumpkin energy bites from Pinch of Yum. I didn’t have pumpkin seeds, but I had flax seeds. I added those instead.
It was a very simple process and gave me a quick pre-workout snack every afternoon when I got home from school. Now, they aren’t overly sweet. So if you’re looking for that, sorry. At first I was a little taken aback, but I really enjoyed them and will make them again.
Put all the ingredients, except for chocolate chips, into your blender or food processor and pulse.
Stir in chocolate chips and roll into small balls and place in freezer until firm.
