
In 2014, I moved to Lake Oconee and started teaching third grade at one of the layers of hell, excuse me one of the elementary schools. I taught there for two very difficult years, but I made some of my very best friends in those two years. So I’ll take it. I remember meeting Christy when I interviewed and was taken on a tour of the school. The following school year we began teaching next door to one another.
The first time our grade level had a “meeting” during the summer Christy brought double chocolate muffins from a local bakery, and I knew I’d made a friend for life. She is one of those people who is simply thoughtful by nature. God has blessed me because I have several friends like that. Christy is one of them. I have to will myself to be thoughtful. For her, it’s just an outpouring of her heart.

We bonded over the Bachelor, our love for running, and quoting “Mista, mista get me outta here” from Happy Gilmore when our days at school became really difficult. Some of my most memorable moments of teaching involve Christy…
-the little girl who came to school sans underpants and we found out when she sat criss cross applesauce on the floor
-the boy who threw feces in the classroom
-the boy who said in all seriousness to us “Does it look like I have anything in my pants?”
-putting up WANTED posters for a missing America rug. Our principal did NOT see the humor nor did he appreciate the amount of ink we used to make those posters


I had the pleasure of seeing some of my old coworkers this past weekend when we rendezvoused at the lake for a picnic. Christy brought this peach poundcake. Your summer needs it. “You come from Georgia where the peaches grow. They drink lemonade and speak real slow.” Name it.

Prepare bundt pan with 2 Tablespoons of butter and 1/4 cup of sugar sprinkled into pan.
Prepare 2 cups of chopped fresh peaches dredged in 1/4 cup of flour.
Cream:
1 cup of butter
2 cups of sugar
4 eggs
1 tsp of vanilla
Stir together:
2 3/4 cups of all purpose flour
1 tsp. baking powder
1/2 tsp. salt
Add flour mixture to sugar mixture and stir to combine. Pour into prepared bundt pan and bake at 325 degrees for 1 hour and ten minutes.

Make the poundcake and share it with some of your favorite friends cause peaches be crazy.

I’ve never tasted a peach pound cake, but it sounds like summer perfection. July Fourth weekend it will be on our table Maybe with Kermit’s ice cream!
