It’s a little toasty outside. We are all roasting, and no one wants to stand behind a stove for more than 15 minutes. Right? Right.
So, what’s a girl to do? Eat some lettuce. Obviously. Sidenote: If you’ve ever watched Keeping up with the Kardashians, you’ll know about those giant salads in giant bowls they are always eating, and they always look so good. I just really want to get one. Granted, they are probably $32 each, but you can’t hide money even when it comes to leafy greens.
My first idea stems from inspiration from of my favorite places to eat from when we lived in Little Rock. Shoutout to the Natural State. It’s a BLT salad. They serve it as a wedge, which I sometimes do, but this time it was romaine and spinach. I know. I know. I’m getting a little too crazy.
Whatcha need:
-greens
-crumbled bacon
-diced avocado
-sliced cherry tomatoes
-diced red onion
-balsamic glaze-don’t skip this part!
-they add blue cheese crumbles, and when I’m feeling wild,I do too
-ranch or blue cheese dressing
PS If you’ve never made your own ranch, it’s very much worth it, and it very much beats anything from a bottle.
Here’s the recipe I use:
-1/2 cup buttermilk
-1/2 cup sour cream
-1 Tbs. chopped fresh parsley
-1 Tbs. chopped fresh chives
-1 1/2 tsp. fresh lemon juice
-1 garlic clove, minced
-dash of salt and pepper

My second idea is a Georgia summer’s dream because it has peaches.
Whatcha need:
-greens
-diced peaches
-diced avocado
-some blueberries
-goat cheese crumbles
-granola

-dressing (I like honey dijon or a poppyseed dressing)
Honey Dijon:
-1/2 cup mild tasting olive oil
-1/3 cup balsamic vinegar
-2 Tbs. dijon mustard
-1 Tbs. honey
-a little salt and pepper

Both of these salads look really good. I loved those big salads they ate. A blogger/IGer recreated the famous salad. It is pretty easy to do and way less expensive that way.
