In the summer, I will eat any and all recipes that consist of berries, peaches, and zucchini. One of my favorite places to look at new recipes, Pinch of Yum, put this recipe up the other day, and I grabbed the almond butter and said, “Let’s do it.” I think they are delightful and hey, it’s vegetables. You’re having vegetables for dessert. Be proud of that. I will say they aren’t overly sweet, but I appreciate that. If you feel like you need your desserts to lean a little more towards a cavity, then maybe add a couple tablespoons of sugar.

I’m going to go really healthy on this one. As I type this, half of my kitchen is in boxes. Half of it remains in the cabinets. And I’m surviving on a random assortment of things from the freezer. It’s truly Shangri-la. These almonds from CostCo are a nice little treat as I box up my life and pop culture references.

Something to Watch

I mentioned on Friday my love for the Olympics. 2020 stole so much from us, and one of those things was me saying “How’d they do that?” 30 times a night while watching those Olympians. I love it all, and I can’t wait. I’ve been so close the Olympics a couple of times, but have I witnessed them in person? No. Where were the Olympics in 1996? Georgia. Where do I live? Georgia. Did our parents take us there? No.
Where were the Olympics in 2008? China. Where did I move to in August of 2008? China. Was I able to go? No. I did, however, go to Beijing the next spring and see all of the Olympic “leftovers.” I shed a couple of tears when I walked in the stadium. It was just too much.


On a much dumber note, I also enjoy watching Big Brother in the summer. It is completely stupid, but I still watch it. There’s obviously something entertaining about it, but I want to tell CBS to hire someone new for their competitions because they do make me roll my eyes quite often. It will be back on our screens on July 7th.

I’ve only watched one episode of This Is Pop, but it is right up my alley. It takes a look at pop music and how it has influenced and shaped our culture. The first episode is all about Boyz II Men, and not to brag, but when I was in Philadelphia for the Fourth of July, I heard them recite the Declaration of Independence.


Something to Wear

Can I say nothing? No, no I can’t. That’s disgusting. Since I can’t say that, I will say that I love this little, casual dress from Target. It’s cool and comfortable, which is perfect in my summer book.

I’ll also say SPF. This brand is my favorite sunscreen with cleaner ingredients and also not a huge expense.

The Golden Girls and Mrs. Roper had it figured out. Muumuus are amazing. My roommate bought these for us as a joke, well the joke is on us because we love them.

Something to Buy

These little monkeys will be two in a couple of weeks. (HOW IS THAT POSSIBLE???)

Since they are only two, it won’t hurt their feelings about the fact that I’m getting one new present and bringing in the exact same thing that we already have and wrapping both. We already have one of these and love it, and in true twin fashion, they fight over it constantly. So, we are purchasing one more to have a set. It’s the perfect little tricycle for little ones because it adapts to their age, and the cautious side of me loves it because you can buckle them in.

Did I just buy a juicer on Prime Day? Yes. Yes, I did. I have a new house that I’ve named Kelly KapHOUSEki, and you’re all invited over for liquid celery. Bring the noise. B-buh-B-buh-b-b-b-buh-b-buh-b bring the funk.

Something to Do

Since I’m on a dessert kick, my something to do is very ambitious. Find a couple more ice cream recipes to make. We got this little beauty last summer, and our favorite was this strawberry recipe. I don’t even really ever want strawberry ice cream, but this was a summer’s delight.

I move on Sunday. My “something to do” is going to be all the unpacking and organizing. I bought this blush shelf paper, and I’m weirdly excited to put it in my kitchen cabinets and drawers. This is 31.

Ok, Kat.. THANK YOU for the shelf paper recommendation. I, too, am moving in a few weeks. I DREAD it. This little tip actually made me see something positive about the move! And, OMG the thin mint almonds! Caroline sent me a picture of them the other day. It was quite the tease, since our Costco doesn’t open til next month. 🙂

Your girls are just sooo cute. My girls loved those bikes and we also had the wagon by the same company. We have an ice cream maker that we should use again. I want to pin the strawberry ice cream recipe to make!! I heard good things about those almonds. Thin mints are my favorite girl scout cookie, so I am sure I would be all about those.
