
Healthy? Check. Colorful? Check. Filling? Check. These are all requirements of mine for an A+ dinner: Salmon Tzatziki Quinoa Bowls. Say that 5 times fast. In case you’re in need of an idea for your menu this week, give this a try. This isn’t really a recipe; it’s more of a concept.
Concept 1: Prepare quinoa.
Concept 2: Spritz some veggies ( I did zucchini, tomatoes, and broccoli) with a little oil and sprinkle some Greek seasoning. Then roast them at 425, which is the only acceptable temperature to properly roast veggies (in my opinion).
Concept 3: Prepare some salmon-grill it, bake it, sear it in a cast iron, you do you. I added some lemon juice and a little a lot of dill.
Concept 4: Combine all ingredients into a bowl because a bowl makes it more fun, and fun is my middle name. Then add some tzatziki sauce, a little feta, and a spritz of lemon. You can of course buy some already prepared tzatziki sauce, but making your own just takes it to another level. Here is a very easy way to make it, and you’ll want to eat the whole bowl.

There. Dinner is done, and it’s tzatziki and Greeky.
