- What I’m Eating:
On the menu this week, I have two of my current favorites. Buffalo Chicken Casserole from Real Food Dietitians and the Southwestern Kale Power Salad from Cookie and Kate.
Also, these black bean snaps are phenomenal. Go buy a bag or five.

2. What I’m Reminiscing About:
This past weekend and the complete and total upset that was the “Run for Rabies”. Kidding. Kind of. I shared on Friday that my brother in law and I were running a half marathon, and we had a wager on the race. I was poised to win, but I underestimated his military mental training. Also, men are just faster. He was 39th male. I was 12th female. I should have had a head start. I’m not bitter. It’s fine. I’m fine. Now, I just have to face one of my biggest fears and donate blood.


3. What I’m Loving:
Drinking coffee out of a mug that isn’t a travel mug. It’s a small luxury, but it’s one of my favorite parts about not havg to get up and go to school. And I have quite a few mugs to choose from. Shoutout to brother in law for the Luke’s Diner inspired mug holder.

4. What I’ve Been Up To:
Finishing school, writing report cards, and cleaning my classroom.

5. What I’m Dreading:
Packing.
I’m moving. From the time I left my parents’ house for college I moved every single summer for 11 years. 11! I’ve been in my current apartment for almost three years, and I am DREADING packing things up.

6. What I’m Working On:
Two of my very dear friends are both expecting little girls this summer, and I almost always crochet friends’ babies blankets. Well, I wanted to flex some other creative muscles and decided to make a cross stitch for one of the babies. I’ve always considered myself a bit of a renaissance woman. Cross stitching isn’t hard, but it’s time consuming. It’s taking me FOR.EV.ER. and Baby May is due any day. She MIGHT get this cross stitch when she turns sixteen.

7. What I’m Excited About:
Since I am moving, my roommate and I have dubbed June the “Farewell Tour”. We have a lot of ridiculous stuff planned and a lot of calories we plan on consuming. The motto of our apartment has been “First in Friendship. Fourth in Obesity.”

8. What I’m Watching/Reading:
I’m never not going to be watching reruns of sitcoms. New Girl, Parks and Rec, and The Office are almost always on as background noise.

9. What I’m Listening To:
Gilmore Guys podcast. If you love Gilmore Girls, give it a listen. I would advise skipping over maybe like the first five or so episodes. It took them a while to find their footing, but man, they slay me.

10. What I’m Wearing:
These Target sneakers. (As seen above in the cross stitch) I haven’t gotten a post race pedicure yet, so I’m wearing these sneakers with shorts and casual dresses until my toes are more runway ready.
11. What I’m Doing This Weekend:
Our niece, Laura Kate, is having a mermaid themed birthday party which is set to be the social event of the season. I’m leaving the party and driving to north Georgia for a friend’s wedding. I hope this isn’t like that episode of Boy Meets World where Cory tries to be at Topanga’s Sweet Sixteen AND Frankie’s dad’s wrestling match. I can’t go back and forth, so I’ve got to do something I’m not great at-be on time.

12. What I’m Looking Forward to Next Month:
The Apartment 1428 Farewell Tour. It’s going to be a month of delicious foods, our favorite shows, and general shenanigans.
