
Ms. Nicole, this one is for you……
I love mint chocolate chip anything. It’s my go-to ice cream flavor. I just had mint chocolate cake blessed by Mama Oprah on my trip to Indianapolis. And thin mints are the best girl scout cookie. In college, I’d get thin mints and a can of Duncan Hines cream cheese frosting and make cookie sandwiches. It was a different time with a different metabolism.
I’m currently on a low to no sugar diet. I’m half a human, but I’m surviving….barely.

I’m technically not allowed to eat this recipe from Chocolate Covered Katie because of the sugar from the banana, but YOLO. I went from Girl Scout cookie sandwiches to calling a banana “a treat”. WHO AM I? I hate getting old.
According to Katie, the McDonald’s Shamrock Shake has 64 grams of sugar in a small. Even the sugar addict in me is grossed out by that. So she created a healthy version of this treat. Pro tip: make sure your bananas are very ripe. If not you’ll have basically a mint ICEE. Don’t ask how I know.
Ingredients:
1 overripe frozen banana
1 cup of milk of choice
chocolate chips or cacao nibs (optional)
1/8 to 1/4 tsp. of peppermint extract
a handful of spinach (for health and color)
scant 1/8 tsp of salt to bring out the flavor

She also has a chocolate version of this shake.
Give one or both of these a whirl because March needs mint desserts (really every month does, but especially March). OR if you want a treat for the ages, find a Girl Scout and get dat Duncan Hines can.

If I am the Ms Nicole you mentioned…I made the blog!!!! Cannot believe it!! I am honored, excited, and proud to be mentioned for our shared love of all things chocolate/mint! Oh. My. Oprah cake! WHAAATTTT?! I cannot go on until I make a trip to Indianapolis for this. I’ve also been living the no/low sugar life since January 25th (but who’s keeping track). Your recipe with the banana will be a nice addition to my shake rotation. I think we must be related. I’ll send a pic of my newest Choc/Mint addiction via Caroline. I’m sure you’ve already tried it.
