Something to Watch
Kat- During the summer I’m trying to be outside and active as much as possible. I cannot and will not be someone who sits on the couch all day watching TV. But a quick 20-30 minute brain break? Yes. That’s doable. Enter Community. It ran from 2009-2015, so there’s a chance you’ve seen it. I just started watching it. It’s absurd, but I laugh out loud every single episode. There’s a character who lives his life as if it is a movie or tv show. That speaks to me.

Caroline-Well, NORMALLY I’d be knee-deep in roses watching the Bachelorette on Mondays. Thanks to Covid, I’m not. Don’t worry; I’m not bitter at all. That was a lie. I completely am. I really don’t watch a ton of TV during the summer; I save up for fall and winter. However, one of my favorites started up again this week. If you’ve never watched it, give it a try. Sweet Home Sextuplets follows the sweetest family with their NINE kids. They had three boys and wanted to try for one more kid and ended up with sextuplets. Woof. I would sit and watch rerun after rerun of their earliest season when my twins were born because honestly, it made me feel better. I would tell myself that if they can survive with six babies and have a clean enough house for a TV Crew to parade through, then I can easily handle two babies and do some laundry.

Something to Buy
Kat- I have a strong loyalty to Trader Joe’s body butters. I buy a ridiculous quantity of the pumpkin one (as evidenced below by my instagram) when it hits shelves in the fall.

During the summer though? I love the cucumber and avocado one. Now I’m someone who LOVES all things coconut, so you’d think the coconut one would be my favorite. I do like it, but I like the texture of the cucumber one so much better. Trust me on this one.
Caroline-Claire and I like to make popsicles during the summer. We had popsicle molds, but they have somehow vanished since we moved. These will be on our doorstep very soon, and we will be popsicle raging in no time.
Something to Wear
Kat- Is nothing an option? It’s not? Ok. I wore the heck out of this maxi dress last summer, and I plan on doing the same thing again this summer. Try and stop me. I couldn’t find the exact dress from Old Navy, so I assume this is this year’s version. I’m 5’3″, and it’s a perfect length. It’s light. It’s airy. It hides your sweat. Michael Scott would call that a “win win win scenario”.

Caroline-Is there anything better than an elastic waist? The answer is no. These shorts from J Crew Factory have become a favorite of mine lately. Buy yourself some cute shorts because if you’re having to wear an unbecoming mask in public, the least you can do is let your bottom half look darling.
Something to Eat
Kat- Summer equals homemade ice cream. As I’m typing this it’s like I can hear the old ice cream freezer that my mom has spinning away in our garage while she tells me to go check and see if she needs to add more salt and ice to the top. #nostalgia
The church that we grew up in had an “Ice Cream Social” every summer and all the ladies of the church would make their favorite recipe and then we’d get to sample as many as we wanted. It was Camelot. I will never choose vanilla ice cream out of my own accord. Caroline’s husband will though. I don’t know why we let him in the family. He is a Yankee AND likes vanilla ice cream. The only reason you should have vanilla ice cream in your freezer is to go atop your brownies and even then it should be mint chocolate chip. Don’t ask me about politics, but this, I’m passionate about this. However, this recipe that my mom makes once a year is the ONLY vanilla ice cream I’ll eat without any toppings or other dessert to accompany it. She got it MANY years ago from her hairdresser who was named Kermit. Yes, that was his Christian name.
6 cups of whole milk
2 cups of sugar
1 12 oz. evaporated milk
1 small package of vanilla instant pudding
1 12 oz. Cool Whip
ice
rock salt
In a large bowl, combine all the ingredients with an electric mixer until fully combined. Pour the mixture into your ice cream maker and process accordingly. When the ice cream is done, pour into a container and freeze until ready to serve.

Caroline-Unfortunately, my “something to eat” doesn’t come from Kermit. If only. One of my favorite, nerdy things to do when I have a few minutes of peace to myself is to peruse my favorite food blogs and print out recipes I want to try. If I don’t print them out, I will never remember what it was that sounded good or which site I saw it on. I recently printed out this beautiful looking summer goodness from Two Peas and their Pod and tucked it away in my “to try” part of my recipe book. It’s pretty, it’s light, and I could imagine myself eating only this for dinner on a day in July when it will feel approximately 800 degrees outside.

Something to Do
Kat- My roommate and I started doing the Beachbody 21 Day Fix. Now we didn’t pay for it. We (she) borrowed the login information from a friend. I’m a teacher, and she works for a nonprofit. We earned it, ok? We aren’t doing the meal plan part of the program because I still want to live my life, but the workouts are really good. They are only 30 minutes, and I am sore. I will have that beach body I want with no prospects of going anywhere this summer.
Caroline-Annie and Ellie will turn 1 in July. I don’t even know how that’s possible. I feel like I was JUST walking around like a hippo waiting on their arrival.

Soon I’ll be putting together a book of pictures from their first year-one of Annie and one of Ellie. I did this for Claire’s first year since about 10 million pictures are taken of them those first 12 months. I have shared my disgust before how people take so many pictures then do nothing with them. Well, I’m here to remind you to do something with them. It’s so nice to be able to pick up an actual book and look at pictures instead of your phone. I’ve mentioned my love of Chatbooks before, and I’m mentioning it again. They make it so easy. That was my TED talk for today. Thanks for listening.

Here we go, everyone. Summer is here; let’s try and enjoy it, and a way to increase that enjoyment is to make Kermit’s ice cream. Your summer will be better because of it.

My crew loves popsicles. The kind you buy as liquid and freeze once you get them home? Can’t keep them in the house. And I keep finding the wrappers everywhere. Lol.
